Rolex Watch Idiosyncracies

Currently own 2 Rolex watches, one datejust and Milgauss. I noticed the two watches have different Idiosyncracies in terms of winding feel, adjustment of time and power reserve

DJ
Winding feels - smooth
Adjustment of time - Somewhat Smooth
power reserve instantly works upon little shaking (not used for 1 week)

Milgauss
Winding feels less smooth
Adjustment of time - Extremely soft and smooth
Power Reserve requires more effort in shaking before it powers back on (not used for 1 week)

Tried a different unit for the Milgauss but exactly the same model no. and the adjustment of time feels different from mine as well as the power reserve powers back on faster just with little shaking.

How consistent are Rolex watches in terms of these idiosyncracies? are they supposed to be all exactly similar?
