Love love love! I'm in the southeastern US so not as comfortable with some places since all seafood has been shipped here but have a couple of places that have never had an issue with that the wife and I frequent at least monthly but sometimes way more often.
What gets me with sushi is how its perceived by the uneducated/or those new to eating it. It's grown quite a bit here in the US over the past ten years but there are still more people that turn their nose up at the thought of it alone without having an experienced eater help them get into the scene. And the people that eat fried rolls or rolls with cooked seafood that get so excited about the fact that they are eating sushi crack me up. We have quite a few friends that just go on and on and how they just absolutely love sushi and then when we get there they order all the rolls with cooked food and act like they are doing something sacrilegious while they are eating it- meanwhile I'm over there next to them eating raw octopus and chunks/slices of random fish that they balk at. My wife was in the crowd of the cooked variety until she braved some tuna one night with me and she was instantly transformed into trying a wide variety of sushi on her own after making that hurdle. The octopus still trips her out with its texture but she even tries mine when we visit different areas of the world where the species is different than our local restaurants. I'm not like really into the sushi scene since our city is very small and doesn't have any "Sushi Clubs/Sushi Houses", only a few sushi bars within nicer restaurants. I just know I like a wide range of it of all varieties and my favorite is some sort of salad with different chunks/cubes of different fish that is really spicy. If I knew what type of dish this was considered I would search for it when we travel but I've just never been able to see something like it on the menus even tho I'm sure most sushi chefs know exactly what it is and could prepare it for me rather easily. I'm going to attach a pic of the menu of it way maybe the more advanced sushi connoisseur can help me here. Here is what I get as an app at one of our local places and my favorite sushi "dish" I've experienced. It's picture and description don't look anything like what they serve me so it's a spin off of what I'm showing below. I know the chef quite well from going there so often and he makes me little samplers just to keep showing me his creations while I'm waiting on my meals as a gesture of his appreciation of our business. But it comes in a huge bowl with like 4 rice covered rolls and then the seafood and veggies all mixed on top with a stringy type of some sort (I would consider it a lettuce variety but not sure and that's why I consider it more of a salad). I love sushi as well. There's a small little place that is close to me that is not bad. This was a seaweed salad and some of the omakase selection for lunch.
