I have a rose gold date just with a smooth bezel, which I purchased about 10 years ago new. I brought it to rolex for routine maintenance and they are telling me that this bezel doesnt go with the watch and furthermore they wont release the watch to me unless I change the bezel to a fluted one. Has anyone encountered anything similar?

When you bought it new was it offered with the smooth bezel and now the new ones are not? They may not be the sharpest knife in the drawer and are just missing that fact.
You might need to speak with someone more knowledgeable there. Welcome to TRF and good luck. Just noticed you said rose gold Datejust? What is the reference number and can you post a picture of your Datejust to see which one you’re referring to.

They should return it to you as is with no servicing, if you want it serviced that is their policy.
