There is a current or recent model with a roulette so changing it with a black one should be no problem. Jocke here on the forum has done it with his DJ. If you prefer vintage they make aftermarket wheels in roulette.

This is a project I'm working on, a 1570 based 1601 with a roulette installed.

So many beautiful datejusts in this thread for me to drool over.
I just bought my first Rolex, a 1987 Datejust 16030 in stainless steel and white gold with silver tapestry dial. I FREAKING LOVE IT. The SS and silver goes with any color in your wardrobe because it is neutral.
It shines without being flashy, which I like.
I'll be writing a review in this section in a few minutes if you want to read what it's like to own one.
Honestly the two tone is gorgeous, and I would like it.. but so would my grandpa, and every other grandpa around the world.
It's not the 70's anymore, and unfortunately that watch can be a little too flashy in some occasions.
TT is gorgeous and I DO LOVE IT, but the SS is just so much more practical.
It's at home with jeans and a t-shirt, and under the sleeve of a tuxedo

That is the Datejust 36 I would go for go for the Roman dial forget the diamonds especially if it is an everyday wear. SS with rhodium sunburst dial and Roman numerals the watch
