Yes I’ve done this “workaround” on a $150 Seiko skx if I recall correctly. You apply gentle reverse pressure using crown and hold minute hand and can even reverse direction of minute hand, but feels wrong and like you are doing damage. Ok for hundred dollar watch but doesn’t feel right for a Panerai. Perhaps there is some upside to this change that we are not aware of and more to the story.
