Personally I understand the focus on the bracelet. A good bracelet really kind of makes or breaks the watch for me! I swear I have an IWC Mark XVIII that I can't part with just because the bracelet is so excellent!

I have a 2001 16710 with SEL bracelet and can confirm that if tight and not stretched out it's really pretty good. The center links are still hollow. The clasp, although stamped, is excellent because it's so thin, a lot thinner than the 5 digit Sub clasps that had to make room for a diver's extension.

Modern bracelets for the 40mm Sub and GMT's will fit. I have a 2022 BLNR and the Oyster and Jubilee bracelets both fit (not perfectly, but 95% perfect) and really class up the watch. The Tudor BB58 clasp will also fit the original bracelet if you want a better quality, thin milled clasp. Finally, the Ginault 94530G bracelet should fit, has solid end links, solid middle links, and a Glidelock style clasp. I have one on order ($250).
