I use my Panerai's all the time for swimming, diving, jet skiing and on the beach. My Luminors are always on rubber but as my 232 didn't have a rubber strap I used to use a Toshi strap and it has given it a beautiful aged look. Never had any issues! As said septh rating on a luminor is more than a GMT!!
