The more "basic" models hold their value better as they are the "entusiast" watches.
Basic, meaning simple 2 or 3 handers.
There is a risk with Panerai however that they'll make a model exactly like what used to be popular and destroy your value. These aren't stocks, but watches.
So, stay simple and you "should" be fine.
I'm also talking all of these but used. They almost all take a hit from MSRP.
