I’d guess that there are only intended to be three different (original, non-sunburst) Stella green colors (true/darker green, pastel/mint green, and the pale blue-green/turquoise), and the other differences are just among paint batches, aging, and/or photo lighting.

This truly is nothing more than a guess — I’ve only ever seen one page apparently from Rolex which listed Stella colors, and it was obviously incomplete.
