There are other ways to support life that don’t involve a planet to be in the Goldilocks zone. Look at Europa. It is constantly generating heat and possibly harbouring life due to the constant flexing from gravitational forces put on it by Jupiter.

We know what we have seen and discovered. Basically we know what telescopes and cheap probes can see.
