Panerai over a steel Rolex for me, especially if I had those options. Gold Rolex over a gold pam any day.
The Daytona and Pam are casual only watches and the GMT could arguably go with some formal wear. Thus I would wear the Pam as a daily and keep the GMT fresh for suit days.
Personally I would take advantage of the crazy market and sell the steel Daytona to get a fairly cheap upgrade to a gold Day-Date or Sub. Daytonas are too busy for formal, so it seems like a great time to swap one for a gold Rolly and diversify your options IMO.
