At the risk of being cynical, I just always find it odd that a lot of these so-called "original owner/found in a drawer" watches happens to have replaced parts, modifications done, and a confusing representation of parts.

I think it makes sense in this case. Knowing the general location where it came from, there are few of any authorized Rolex techs to be found, especially through the 70s and 80s. The one shop referenced by the OP is as good as it gets, but they’re really just a jewellery shop. My point being: if it was serviced in the past it was most likely done by a generalist watchmaker and not a Rolex specialist.
