For me that's an easy answer. Lack of unidirectional bezel (I actually dive w/ my watches and need a unidirectional bezel), lack of timing bezel (I actually use the timing function on a daily basis) and more importantly for everyday use - the incorporation of the Glidelock clasp. Those are the top 3 that jump out at me of why the GMT-C can't be considered the 'perfect/complete' watch.

That said, I've got to believe it's only a matter of time before Rolex incorporates the Glidelock into all their sport lines of watches, but as long as the GMT still does not have one, it will take a backseat to the Sub IMO.
