A 31mm with fluted bezel is still under the radar. The skin doc I see wears a 34mm AK with fluted bezel, white roman dial, Oyster bracelet, and it does not jump out at me.
Most people will not know you spent $6,000-$8,000 on a watch. If you feel a little self-conscious in the beginning you can pair the watch with a couple of bracelets, sort of mix it in and tone it down.
Fluted is nice. Reflects sunlight across the table along it's machined facets. Jubilee has always been a favorite and may feel more comfortable in the beginning.
After you put it on, regardless of the choice, and wear it non-stop for a few days, you and your watch will feel right at home with one another. Then watch out. You'll begin thinking about the next watch.
