Well, you've well summed-up your concerns. Do you use the watch regularly? Then the setting wouldn't really be a problem but I guess if you mention it, it is...
I have a 5712 but thought for a very long while adding a 5711 because it was the purest version in the aesthetical sense, hence the most elegant for the Nautilus line-up that I love wearing with suits.
Therefore, I personally came not to value the Nautilus models considering their complication (more complicated usually more appealing to me). The 5711 could compete with a 5990 for instance (to me).
So I would totally consider a 5811G over a 5740G. The dial color and the way it works with WG (that is also more appealing to me than steel, visually) is fantastic. Considering the 5740's pricepoint, I would go for 5811G but if price wasn't a problem, then I would still prefer the perpetual calendar. If I already had (or planned to get) a perpetual calendar in the classical line-up, I would I think get the 5811.
Though call (budget aside).
