I wouldn't worry about that.
The extract adds the production date and date of sale. Often enough the certificates are blank and don't include the date of sale and current certificates don't include the production date either. The certificate for a 5110 should still include the production date in code though.
Not sure but Patek might well run the numbers against stolen watches when issuing an extract. So possibly additional comfort on that front as well.
