I'd hate to think a winder can't be used for a watch that:
1 - is not typically used as a daily beater
2 - only has a 40-hour reserve and
3 - has no date quickset.

I actually have a couple of clients with some Complications AP's based on the 2121 movement reporting that the winder doesn't wound the watches.
So i'm pretty confident that your winder is the problem not the watch.
