I have both Stainless Steel and white gold Rolex.

The difference between White Gold and SS is so obvious that if you can't notice it I'm not sure why you'd even bother worrying about things like the quality of the movement. For someone else looking at you wearing it the difference is subtle in terms of luster, shine, color and the way the metal "pops" in light but when you wear the watch it's night and day. The way the white gold reflects light, the muted color but brilliant shine, the weight, the feel of the watch are all different no your wrist in ways that to me at least are not subtle. The downside to WG is the way it scratches and dents.....gotta be careful. The thing just pops though in a totally different way than SS does.
