Green tag service interval

I'm sure this is been asked and answered but I could not find in search.

I'm considering a used ceramic submariner. It is my understanding that watches sold from mid 2015 on came with a five-year Rolex warrantyand a 10 year service interval. The same model 116610 is sold 2009 through 2010 and also 2011 to present. I've limited my search to only watches sold from 2015 and up because of the interval time.

So long story short what is the difference and why does one have a longer service interval than the other

Rolex has never stated that they recommend a ten year service interval. Only that the "average service interval is ten years", meaning that is what they are seeing in practice. Don't overthink it. The warranty is the only thing that changed.
