Well that worked.
I'm a lover of aged whites. My old man's gut can't accommodate young acid whites any more.
I bought some of this 2012 Semillon in 2013 and stacked it away to see if I could 'age' it so that my stomach could handle it.
Quality Semillon ages so well. A lovely fresh but soft white with great 'minerality' that is very easy drinking. True to variety so elegant. Inspired by the visit of Elizabeth R to Australia in 1954.

Good work Rock, aged Hunter Valley Semillon is one of the greatest drinks around. Not many places in the world where Semillon can age like it does in HV!

This week we attended a 'Winemaker's Dinner' as part of International Beef Week 2018 here in Queensland. Leading winemakers Ross and Judy Brown of Brown Brothers fame were the guests of honor. We were fortunate to sit at their table.
There was a 5 course dinner, each accompanied by fine wines.
My favourite was the cheapest of the lot, the 10 Acres Shiraz and my least favourite the most expensive - the Shiraz, Mondeuse Cab Sav., which needed about 20 years.

Had it the other night, its very restricted right now...I suggest decanting for 4 hours minimum...and then the rest of your bottles stick in the way back of your cellar, and revisit in 5+ years. But what is there was beautiful, just very restricted.

2010 Le Petit Lion as I get ready to grill some steaks. Drinking very well right now! Decanted for about an hour, before I tasted...but really should have went 2.

Have you had the 2013 Wraith? Exceptional! Was paired against 2012 Bond St. Eden, and I think everyone at the table forgot about the Bond..haha.

Tonight for me, nothing was opened, attended a dinner at a friends house who had opened 2010 Pauillac, which is drinking great right now! Luckily I have 1.5 cases in the cellar. Mother's Day tomorrow I believe 2009 Maiden will be opened.
