This is advance steak cooking. I need a post for steak cooking 101 The steaks in this thread are cooked to perfection!

Thanks. The process seems really illogical since I'd always heard to sear the outside 1st to lock in the juices, but it turns out the most tender, perfectly cooked steaks I've ever had.

I second the Sous Vide method. Set temp to what you want and let it go. Pull it out, pat dry, and sear it in some hot butter, oil or on the grill. You'll get almost edge to edge perfection.
