Very nice looking Gerardo. My mother used to make something similar r us for breakfast back in the day. They were always yummy. I'm sure yours are as well.

That brings back memories of my mom making those on Sunday morning. She did green and red bell peppers (probably for our gringoized tastes) but added a bit of mild chorizo.

I think I have to make those this weekend!

You can add as many ingredients as you wish; the basic concept is this, once again, think about small towns 40 years ago, tomato, onion, eggs and tortilla (back in the day, lard was used; the flavor is OUTSTANDING!). Bell peppers would add a nice, fresh taste to it.
