Having given this some thought, the answer is actually quite obvious, isn’t it?

A Tudor Ranger. Moderately sized at 41mm, thin at 12.2mm, drilled lugs so he can change the strap to something that’s appropriate for the mission, and 150m WR with a screw down crown, which is more than enough for anything but deep diving.

I used to think a Breitling Aerospace would make a lot of sense for Bond: stylish, accurate, lightweight, practical. Then it occurred to me that one wrong knock on the crown at an inopportune time will set off the minute repeater and alert his enemies to his presence. Not so good.

He would wear a SD50th probably taken from a dead Russian spy (only way to beat the AD waiting lists).

As for Daniel Craig's performance, he plays it as a thug who inexplicably seems to pout like Zoolander through the majority of the films.

Well I'd definitely go with a Rolex as something that can be converted to cash fairly easily in a lot of places in the World without much trouble, just in case. And then a model that blends in fairly well and isn't TOO valuable or esoteric.

In short, yea, a Sub.

He'd definitely wear a Rolex SS sport model. Sub, SD43 or Deepsea but apparently there's a long waiting list so, he'll have to wear an Omega.

The SD43 or DSSD are perfect; it should be the ultimate tool watch. Omeeega is a bit pretty for that.

Besides, "Pouty Sid James Bond" don't say "Omeeega"...

I see Bond today having a two watch rotation:
A Rolex Explorer 214270 for when he is tooling around, off duty. Rugged, simple, and under the radar.
And a Blancpain Fifty Fathoms Bathyscape on bracelet when he is on a mission. It's loud, big, and not that common.

I'm biased here since I own one, but Explorer II would be great for modern Bond. A nod to the original Explorer in the books, but with 42mm modern size and true GMT functionality for all the globetrotting Bond does.

I would respectfully suggest that an equally
interesting enquiry here, might be: WHY did Ian Fleming
choose a Rolex for Bond, and what COULD have been the alternatives?
Maybe these answers would give us a solution to this threads question.

Because a Rolex was a relatively accessible waterproof watch. At no point does Bond think of it as a luxury good, or anything other than a tool. He has one in Live and Let Die because he needs to be underwater, and Fleming got one himself a few years later, which led to the mention of it in On Her Majesty's Secret Service. (In the latter, he uses it as a knuckleduster and breaks it, leading him to think about buying a replacement in the after-Christmas sales.)

There's a really badly written fake Fleming book quote, ostensibly from Casino Royale, that comes up on forums a lot, which I will copy here for amusement.

"He could not just wear a watch. It had to be a Rolex... a gentleman's choice of timepiece says as much about him as does his Savile Row suit."

... which is not the way anyone familiar with tailoring talks, let alone watch people.
