The literary Bond chose his watches, at least sometimes. So if OP is asking what the Fleming Bond would wear today, then we are free to speculate. Of course, the movie Bond is a whole other matter: the character is directed what to wear by Q branch, and the filmmakers' choices are dictated by a product placement agreement.

What watch would Bond wear today?

My guess is James Bond does not have the patience to wait for a SS Sports Rolex so he will end up with a DJ or an Omega

Bond: “I’d like to buy a Submariner, Rolex Submariner, no date please.

AD Sales Guy: after stopping himself from laughing... “sir, these are in very high demand. Have you purchased any watches previously from us?”

Bond: “Why yes, I bought an Omega a few years ago!”

AD: Now in a rude tone of voice... “I’m sorry sir but if you want that watch you’re going to have to buy a gold DayDate also”

That's reasonable.

Incidentally, I'm not sure the literary Bond would be wearing a Rolex if written today (nor do I think he would wear Omega). He owned his OP, in the novels, essentially as a practical tool, not as some kind of luxury item. (The books did not shy away from showing his expensive tastes in food and such, so if Fleming had wanted to make him a watch lover wearing Pateks and the like, he could have. He did not.)

In the 50s, the Oyster Perpetual was your best bet for a waterproof, rugged watch that stands up to abuse without manual winding. Today, that field has democratized quite a bit, both among cheap automatics like the Seiko 5 and quartz watches.
