I thought it was called Datejust because that was what was printed on the dial.

It's because the date doesn't switch over slowly over the course of several hours. Instead it uses gears and a spring mechanism to "flip" the date instantaneously, resulting in the wearer confidently knowing that every time he looks down at the watch, the date will always be just.
