Are there examples of Rolex vintages/models that became highly collectible and valuable only to have the interest disappear and return to "normal"?

Bubblebacks were what everyone had ti have back in the 90's. That have passed for sure.

Looking at things more recently most things are up but if you compare different models you will see that Daytonas, anything gilt etc have moved up lots while for example red subs, 1655, DRSD's have moved up but not at all in the same rate. They are still up so probably not what you asked for. I don't see it likely they move back any time soon.
