Does not really make any difference what position they are in when they are removed,
When it is time to reinstall, just turn the winding crown so the hour wheel and cannon pinion are moving clockwise, when the calendar jumps you know it's 12 midnight and that's where to point the hands. Sent from my iPhone 5s using Tapatalk

Because you have to remove the stem before putting the movement back to case.
And, you have to put the dial and hands before you put the movement into the case. (Or at least that's the order I use.) |

I believe it is easier to properly align the hands with the stem in place. Then it is removed just before putting the movement back into the case.
Just my opinion. |
