I tried doing a brisket a little too early in my smoking career. Turned out tough and dry. I think I am ready to try again, this time with a lot more patience. Got any tips?

Start with a nice piece of beef. Costco is great for having prime brisket on the cheap. Use a lot of dry rub, once heavily rubbed, wrap in foil let it sit in the fridge for a day or two. Low and slow on the cook. This one was 30 hours. About 15 hours of smoke at 160 degrees, once it hits 160 in the middle, double foil wrap then I cook at 205 until the internal temp reaches 205, then drain, re wrap in clean foil and let sit a couple hours before cutting. This one turned out great.
