Blu, if it doesn't get hard the first time just roll it up, fold it in half put it back in the cup and reheat another 3-4 minutes. I had to do this twice, I must have the most wimpy microwave in the world. Finally turned out great.

Hey Guys:

It's time to make some more brittle for the 2017 Holidays!

The wife picked up all the ingrediants today at the grocery store and we will be working hard in the kitchen this weekend!

Be safe and be sure to share to sweetness!

Well, here it is! This is so much better than I remembered. I used dark corn syrup again, turned out amazing. I first looked at it and thought, this won’t even make it through the weekend. Then I tried a piece, hell this might all be gone tomorrow!
Thanks again John

Hey John. I'm going to try this. Thanks for the bump. Like Tim I forgot all about this. Have you tried this using brown sugar instead of white?

Batch number 2! A couple hints if anyone making this great recipe is interested, I’m still using dark Karo, I upped the raw peanuts to 1 1/4 cups and to give it a flatter shape right after you pour it onto the cookie sheet I put butter on the backside of a pancake turner and press it flat. OMG this stuff is great!

Compare your cookie sheet to mine...I think the big thing is that they both have "patina" to add extra flavor!!

Now I'm going to have to buy some raw peanuts and give this a try.

MICROWAVE PEANUT BRITTLE RECIPE

1 cup sugar
1 cup raw peanuts
1/2 cup Karo syrup
1/8 tsp salt

Mix the above ingredients in a pyrex measuring cup and microwave on HIGH for 3 1/2 minutes.
Remove, stir, return to the microwave on HIGH for another 3 1/2 minutes.

Remove and mix in the following ingredients:

1 tbsp salted butter
1 tsp vanilla

Return to the microwave on HIGH for 1 minute.

Remove and add 1 tsp Baking Soda and stir QUICKLY; then pour onto a buttered cookie sheet...

Let cool for 15-20 minutes and break into pieces!

NOTE: Every microwave is a little different in power output; you may have to adjust the cook times for the best results....
So when you say "raw" peanuts do you mean raw or just shelled, cause the peanuts in you picture look roasted?

Raw means uncooked in this context; here is what I use!

Be safe

Yessssss! Thanks John, I never make this until you bump the thread. Going for the raw peanuts tomorrow. If any of you haven’t made this stuff you’re really missing out!

I adjust John’s recipe just a bit by using dark Karo and up the peanut amount just a smidge. This stuff is like molten glass to work with so be careful. Also as soon as it’s poured onto the sheet I have a buttered spatula ready to press it flat. It’ll do it on its own but I like mine thin.

You guys absolutely have to make some of this!
Merry Christmas!
