Non traditional today...smoked pork for tacos, jambalaya and some salsa that I smoked all the veggies on the smoker first.

Been cooking all day. Brined the turkey yesterday using Alton Brown’s recipe and pulled it this morning. Dried the bird and iced the breast meat for 30 min to slow the cooking there since the breast needs to finish ay 165F and dark meat at 175F. Then filled the cavity with the aromatics, and buttered and salt/peppered the skin. Fired up the smoker at 9 AM, added a mix of apple and pecan wood and cooked it indirect @ 325F for 4 1/2 hours. Laurie did my family’s corn casserole (thanks sweetie!), garlic mashed white sweet potatoes, and bacon-pine nut roasted brussel sprouts. Oh and some pumpkin parfait for dessert.

Starting with 'risengrød' (hot rice pudding)..with cinnamon and butter, then roast duck, along with sugar glazed potatoes, red cabbage and an Awesome gravy..with wine of course....!!

Christmas dinner in the mountains took some extra effort but was amazing! My wife worked the wine reduction and roasted garlic mashed sweet potatoes in the kitchen while I did the asparagus and elk tenderloin on the grill in the snow. And kudos to a good friend from another forum for the GSM blend from Pasco Robles that we enjoyed with dinner - outstanding as well. #lifeisgood

We all know you don’t need reservations for a nice dinner. For New Years Eve, Laurie and I did elk steaks with garlic herb butter, asparagus risotto, and grilled romaine salad served with a ‘12 Chappellet Pritchard Hill Estate Cabernet Sauvignon. #lifeisgood
