Apart from the dial (which saw the removal of the AP logo, addition of galvanized text, and longer hour markers), the changes are:

50th anniversary rotor (I’ve confirmed with the boutique that the ref will continue into 2023 with the traditional rotor)

The bracelet, which includes larger chamfered edges and more of a taper on the links closest to the case

So what's the consensus on peoples thoughts specifically regarding the bracelet on the 15510 vs the 15500?

15510 bracelet is much more comfortable for me, the tapering [thinning] of the bracelet make a lot more of a difference than you might think. My experience is on my ROC 50th but they share the same bracelet changes.
