Apologies for the late reply but thank you all for your comments!

I bought the watch, a U-series with Swiss only dial. Hands, insert, dial bracelet and lock are all original. The shiny parts on the side of the lugs have been polished very gently. Beautiful condition overall so very pleased with the purchase (despite me wanting a 100% unpolished). Minimal bracelet stretch as well which feels super. Ill return with some pics later this weekend.

Congrats! Nothing wrong with a light polish. Looks like a great example.

It looks like it has been, you can sort of see the brushing grain looks a tiny bit off, but nonetheless, a light polish. I wouldn't be put off by it.

This is a GMT Master (ref 16700) from the late 1990s (~1999), not GMT Master II (ref 16710). In the 16700, the dual time hand is not independent from the main hour hand; date is set independently of time by turning the crown ("quickdate"). In the 16710, the dual time hand moves independently from the main hour hand; turning the main hour hand "around the clock" in 1-hour jumps sets the date).

The bezel insert and dial are absolutely correct for the period. The SWISS only dials are actually quite rare.

The case is polished quite a bit, especially on the sides, as there are no chamfers/bevels along the lugs (see an unpolished example below), but it seems to have been professionally done (probably at RSC). Looks very nice regardless, and congratulations on the purchase! Bracelet looks little polished if at all.

Looks like a nice GMT. Insert looks correct as well - the light fade on the insert looks proper for a 20-year-old watch.

Polished or unpolished, I don't see what difference it makes. The only thing I can tell for sure based on the photos is that the bracelet has been refinished at some point.

It has been polished, but very lightly and well. Notice the lack of crisp chamfers.
