Without a doubt go hesalite. It is THE classic moonwatch, and you save some money in the process. If I were getting a LE Speedy it might be different, but to me you if you are getting a Moonwatch it should be the closest configuration you can get to the original 50 years ago.
You also get a different look with the crystal versus what you are used to with saphires. This picture gives you an example. Look how the crystal bends the reflection. It's a beauty |

I get the plastic crystal discussion and everyone is entitled to an opinion. I prefer the sapphire crystal in any watch I own if it is available. I can remember owning watch from the 60's, 70's and 80's before a lot of the sapphire crystals were standard and I always liked the upgrades to sapphire when they became available. People will tell you that you can polish out the scratches and that is true as you remove part of the plastic to do it. Get a deep scratch and it does not polish out. You will have to replace the plastic crystal as it become thinner from polishing. Younger collectors always make me think about myself and how sure I was of the facts and how I was willing to share my opinion as to what was what. Maybe it is part of the journey but I like modern movements, preferably automatic, and sapphire crystals and case backs so I can look at the movement and not deal with scratches. Just my thoughts.

Unless I happen to be actually going to the moon...I'll stay in 2019 and go with sapphire. Modern day, modern material. No scratches and (please god) no poly whatever to polish it.

I am also thinking of getting a Speedmaster finally. Is the Hesalite version thinner than the sapphire version? Since it doesn't have an open caseback. The two movements are the same?

I'm not sure about the thickness (both are reasonably thin given the handwind movement) but the sapphire sandwich does have some upgraded movement parts, as the movement is visible so they want it to look as pretty as possible. The hesalite is classic but I prefer the sapphire sandwich's durability and the visibility of the movement.
