Winding a mechanical Patek

do you wind until you feel a little resistance or a set number of turns to avoid the resistance/fear of over-winding?

Depends on the watch. 5170 you wind until you hear a little click and it’s ok.

All mainspring barrels produced during the past 15 years, at least, will be made such that the spring slips when it gets to maximum tension, thereby preventing the mainspring from snapping due to overwinding.

The number of turns required before it slips will be a function of the winding efficiency, the length of the spring, and if there’s more than a single barrel.
For the majority of watches, you’re looking at around the 40-60 full turns of the crown.
Not all automatic watches are equal though, so if you have some cheaper brands with an ETA 2824/2892 (or variant), then manually winding fully is not something you want to be doing on a regular basis.
