No complaints here Matt. We are just north of you in Cottonwood, AZ at Dead Horse Ranch State Park too. Beautiful area. We’ve been here since the 20th and have been exploring Sedona and the general area. Really like it here and will be back.

Oh my lord! My wife made carnitas cooked in 4 lbs of lard tonight - she is a health nut but this was “authentic” and it was outstanding! I had to pull something nice from the cellar after tasting the meat and the Cab Franc paired beautifully with it. The salad has a lemon and herb dressing on it and cut through the fat. The salsa crudo on the carnitas added some nice spice as well. #IAmStuffed

When we met, I cooked her eggs with some bacon grease (learned from my mother) and she freaked out! I’m still laughing about dinner, but absolutely loved it.

She did drain the pork on paper towels, and then put the chunks under the broiler for a few minutes to try to drive out some of the grease, but that doesn’t make it much healthier. LOL

What's for dinner guys....?????

Trying something different tonight - cold smoking a Cabernet reduction finishing salt. We plan to try it on steaks tomorrow night.

It’s not too hard to do. Reduce a bottle of cab with a few rosemary twigs and a few cloves of garlic. Cooked it down to about a 1/4 cup and strained it and slowed it to cool. Mixed in to about a 1 1/2 lbs of course salt and then cold smoking it with Apple wood for about 4 hours - stirring every 30 min.
