What's for dinner guys....?????

So good we had it again. Smoked and torched filets. Creamed spinach. Roasted beets and goat cheese. Roasted romanesco. Carmelized onions. Jalepeno cornbread muffins.

@trippinjimmy, that’s looks great, but I’m not familiar with that torching method. If you wouldn’t mind sharing a few details, I’m curious about your smoking / torch cooking process.

Sure. I got the idea from TK’s blow torch prime rib in Ad Hoc At Home. He blow torches a prime rib first using a mini propane torch, then slowly brings it to temp. Theory here is you’ll have more pink instead of a pink-grey gradient of meat.

I took that concept and combined it with reverse searing on the smoker, because I question how much smoke a seared piece of meat would pick up.

Also, I should add the torch tends to sear the outside but not change internal temp too much like cast iron or a sear station on a grill would, hence the larger pink center.

I used a traeger for simplicity. Salt, pepper garlic. Dry brined for about an hour at room temp. Weber pellets. Smoked at 180 for 15-20 minutes, then 250 til it hit my temp by the touch test. Seared all over with the torch right away (no rest), then topped each with a pad of kerrygold. Let them rest about 10 minutes...that’s really it. Pretty easy and fun since you’re playing with fire.

Where in Chicago are you? I’m from the Milwaukee area originally.

I have a thermal blanket on the traeger, so I’ve been smoking almost all winter except that crazy 10 day stretch in February.

So a few weeks ago we got invited to a friend's place for dinner when we were skiing. We made brownies and brought wine. The food they prepared is worthy of sharing. It was excellent. We all watched a movie after dinner on Netflix, "I Care A lot" recommend it!

Nice. Love Flora Springs Trilogy and I bet it was great with the brownies. Can’t say I’d pair it with paella but it wouldn’t stop me from eating it!

Thanks gents, I meant it was Good Friday fish food. We are Italian and we may go overboard a little on the food and wine....now we have a reprieve today and then onto Lamb for Easter Sunday.
