Excluding the brands mentioned (and sticking to the $3-$5k range), I'd say Nomos and microbrands like Dornbluth, Kurono, Ming and Habring.

Since you excluded Omega and Seiko, I'd say Cartier and Grand Seiko (technically a Seiko, but not a Seiko) fit well.

For a little bit more, Panerai and JLC.

IWC tends (I think to price higher than that..... Breitling is hit or miss for me, but, usually a miss.

Grand Seiko might be the best bang for buck in that price range. As others mentioned Ball and Nomos are great as well.
