Tasty!

We were out shopping and running various errands all day yesterday, and when we arrived home we were both tired, and not particularly interested in making a big meal. For years we have enjoyed a roasted red pepper and boconncini sandwich - red bell peppers roasted on the grill, boconccini pieces (a form of fresh mozzarella), some olive oil, lemon juice, basil, and salt to taste.....all stuffed in a pita bread (pocket style).

We were making it last night, and realized the fresh cheese wasn't.....well.....quite so fresh any longer (sniff, sniff - what's that odd smell?). Well, time for a plan B. We had the roasted peppers, and decided to saute some onions and mushrooms, then drizzled with some extra vrigin olive oil, some sea salt, and into the pitas it went, along with some Monterey Jack cheese we had on hand - it worked great! Add a fine beer and it was a great light meal.



Sometimes the simple things taste the best!!

Aw great, now I want roasted peppers with some Moterey Jack in a pita. The problem, I have none of the above on hand.

And I second that! More partial to the doubles myself though. Gosh, in my next life I'll become a monk. The head of the brewery of course. All that tasting and so little time!
