Next morning. Heat skillet. Slice pork belly. Some fat will be released.

Remove pork belly, use that fat to fry an egg.

Serve. Add agave (tequila) or maple syrup on top of pork belly....the sweet-smoky-salty flavor is OUTSTANDING!

Evening.

Cook pasta.

Prepare roux, add milk, butter and sharp cheddar. Mix with pasta.

Add diced pork belly on top.

Mac and cheese with pork belly.

Open vino....dinner is ready!
