Beautiful Sunday. Overcast, I guess mid 20s C/low 70s F. Conversation goes:

G- Will fire up grill, anyone wants hamburgers?
Family member #1- No. I want skirt steak, medium well
Family member #2- Yes, but mine medium-well with swiss
Family member #3- No, I want filet, well done. Oh, and while you are at it, please make salsa for the week

G- Fancy family I have! Do you guys think you have a private cook???!!!?!?

The proper way to make salsa is to start with fire-roasted vegetables? Red and green tomatoes, onion, jalapeño peppers? I've got someone I want to impress. Learn me on the right way, please.

How about salt, G ... I see pepper on the burger, but are you light on the salt? My dad feels a grilled burger wants lots of salt and that it "cooks off". But lately, I'm thinking he's going a little heavy with it.

Good morning. I used pink salt, so it does not show well on pictures, not too much, just gentle such as pepper.



On salsa, the main ingredients can be used in MANY ways for different salsas. Here, I use (on very high heat) tomato (green and red, one to one...here three), onion, peppers (I like Serrano, they have an earthy flavor) and a couple of garlic cloves (put this close to the fire, not on top as they burn easily). Let the skin chart a LOT (60/70% of the surface). For a quick way to do it, throw everything (except the peppers, put only ONE) into a blender, add some salt and pepper.



Blend everything together. Taste. Adjust salt and pepper. Is it spicy enough? If not, add only ONE pepper (or half) and blend. You want to repeat this until you get the spicyness you like.



This salsa can be used to top beef, add to cheeseburgers (add avocado, refried beans, bacon and make a Mexican burger), nachos, eggs during breakfast....



This size of portions will make about a liter, which goes into the refrigerator and is used throughout the week. This will have the aroma of charcoal and a beautiful blend of flavors. It should look like this (darkness comes from charred skins. If you chart a bit less the vegetables, it will be red, which is also fine. No ONLY way, it is personal taste)

Good morning! Thank you for the primer! Simple as it seems, I've been misinformed for years. You'd cringe at the way Arizona relatives taught me to make it. I've finally looked up peppers, learning what a 4 year old probably knows in your area, that chipotle is smoke-dried jalapeño. And I was about to ask if the Serrano had a similar earthy flavor. I'll buy one, assuming the grocer does not mix them up, and see for myself.

Simple as it seems ... the other thing I want to learn is how to make fried egg noodles. Properly.

With plenty of onions and the crispy ends of roast pork. Now I'M getting hungry!

Fabulous pictures. An ability to cook was high up my wife's "shopping list" for a husband... what she should have said was "personal chef". Ah well, got to keep out of trouble (and stop enableing myself on TRF) while she feeds the baby at night.

Jalapeños are fatter, taste is different. Once again, personal taste. Pic below is jalapeño




Now, remember that salsa? Today, Machacado tacos and....yes, salsa!!!!
