Yellow gold for the same reason I have a few SS watches.

I go back and forth on this too. I fear that if I got the WG version it wouldn’t fully scratch the PM itch. Get the YG

I almost bought a WG and I have RG but will unlikely buy a YG unless my taste changes some time before I die. :)
I think yellow gold with olive dials are pretty but usually RG would look better in the same dial. I love WG for the feel.
Most people who think that WG looks like SS probably never experienced a WG watch. Of course if you care what others think when they see your watch then yes YG would incite more response. :)
That's just me so everyone is different and for some especially those with darker skin YG is beautiful.

I experienced the same.
I bought a WG Daytona with the sunburst blue dial. It looked amazing in pictures and when I tried it on at the AD, it felt right.
I regretted the purchase within a week when it was in actual rotation with my other SS pieces. The WG Daytona didn’t feel special next to my 116500 white dial.
When it came time to purchase my DD, I went for Everose as it is not as in-your-face as YG, but it definitely pops much more than WG. It’s an event every time I put it on, and is a stand out piece next to all my SS watches.

Yellow gold is what the day date is know for but if you only have one watch and that's it. Go for the white gold as an everyday piece. It's more versatile than the yellow.

I have several PM Rolexes. I prefer the WG pieces for everyday wear, or my RG YM on OF. These watches fly under the radar. My next watches will a WG DD40 and a Smurf, in that order.

I prefer WG, I think YG doesn’t suit me. I tend to prefer more subtle and understated pieces. That said, I understand the appeal of YG.

Yellow Gold 100%

YG DD is the iconic model and if you only had 1 to pick from you might as well experience the full beauty of YG.

The whole "under the radar" thing is silly and a copout. If you are "afraid" or "paranoid", don't even wear any Rolex period. Day-Date in Yellow Gold, the natural color of the metal as it's mined from the Earth. Get the watch insured against loss. It is not expensive considering the replacement cost.

A full gold watch is too bold for me unless it’s white gold. I’d be good with YG or RG on a strap though.

I love both but I think WG is the better daily driver.

Don't like yellow or rose gold on my skin. But I like the subtle warmness of white gold and weight/presence. It's also more versatile imo especially vs yellow.. White gold for me.

In my opinion the only configuration to have a Day Date in is:
Y/G, champagne dial, baton markers & President bracelet with concealed clasp.

They are all super nice but the WG would fly under the radar a little better.

White gold may be softer on resale based upon the comments. Good idea to soften the hit if you can. Yellow Gold clearly seems to be the preferred metal in this reference.
