Planning on purchasing my wife her first Omega for the upcoming holiday, which does the forum think I should go with, left or right?

I should also add that the Seamaster I was considering has a light blue dial, while this one has a white.

What could possibly go wrong with you making a several $1000 purchase as a gift for her that she didn't get to pick out herself?

Anyway, I think the Constellation looks nicer. I bought my mom one like 10 years ago when I got my Seamster 300M Pro. She picked it out herself though at the Omega Boutique.

It is going to come down to fit and what she likes. I would have the store hold both watches and give her a nice card with a some type of note that she has a new watch waiting for pickup at whatever store. You can go and see and can also have the watch professionally adjusted. Too many factors at play just to buy it cold. Good luck and nice watches.
