Leo, I am on the coast in South Louisiana and we don't get great fish either. If I want fresh fish, I have to find someone who fishes or go to Whole Foods in New Orleans....
Now, Oysters, Shrimp, Crawfish and Crabs....we have that fresh at anyplace you stop. Kind of strange!

Sorry just finished before seeing this thread. But my good neighbor at the marina gave me 5 pounds of shrimp he caught over night. Cooked with yellow, green and red peppers, olive oil, onion, garlic, salt and some hot peppers served over rice.
How much fresher do you want it. Caught at 4 am and cooked by 7 pm of the same day. Man, do I love living in Miami where I can catch fresh fish or have access to fresh seafood. Where did you get fresh cod? My mom can make cod like none other I have ever had. Doesn't even smell like fish!

I've had cod 3 different ways. Even dried and salted like jerky in Barcelona. Never really cared for it. They've always tasted and smelled fishy (not that I mind). And I am the guy that eats baby sea eels and bull testicles and blood sausage. But, my old lady makes it awesome.
