What's for dinner guys....?????

Dinner at PAON in Carlsbad, CA last night...

The 1/2 Lobster on a bed of pineapple, avocado, coconut and shaved red peppers was awesome!

Tuna was very good too! Carrot purée, asparagus, green beans and a special reduction...

They were a hit with our group. Good change up from pork. Cook time was about 5 hrs on the egg at 250. Took them off at 190°. These were back ribs and had more meat than appeared before the cook. I'm going to use short ribs next time and compare. Cheers

Could not wait until fall...craving a red sauce
Fire roasted the onions, garlic, peppers first. Then into the vita mix to course purée. Home made pork sausage for protein. Topped with some Parm.

Pasta is a favorite around here too. Pink sauce with mushrooms, ground beef and topped with some parm!
