Quick question: How easy is it to change the dial? My understanding is that you can't with the new GMT... is it something you can just swap out depending on how you feel that day?

The GMT only was/is only offered with one dial. There is no other dial option to change it to. I suspect you are referring to the bezel insert....the aluminum (on 4- and 5-digit refs) disc that seats inside the steel bezel ring. In which case, yes it can be easily swapped out if you know what you're doing. It was not intended by Rolex to be a diy procedure, and it's probably not advisable to change it out too frequently as it may loosen the tolerances over time. That said, it can easily be done and is a nice option to have, to change up the look every now and then.
