Catching up with the thread. VERY simple!
Cast iron skillet. On the grill (WARNING: Skillet will be V E R Y hot!). Add some olive oil and immediately add chopped onion (half an onion). When onion turns clear (a few minutes), add a chopped garlic clove and immediately (or garlic will charr) add three chopped tomatoes. Do not worry on how coarse or fine, they will break down. As you stir with everything boiling, add chopped pepper (serrano or jalapeno) and for a twist, half a beer. Stir from time to time and reduce. Once you have about half the volume, remove from fire (REMEMBER: Skillet is cast iron and VERY hot!). Salt, pepper and salsa is ready!!!! |
