Catching up with the thread. VERY simple!

Cast iron skillet. On the grill (WARNING: Skillet will be V E R Y hot!). Add some olive oil and immediately add chopped onion (half an onion).

As you stir with everything boiling, add chopped pepper (serrano or jalapeno) and for a twist, half a beer.

Stir from time to time and reduce. Once you have about half the volume, remove from fire (REMEMBER: Skillet is cast iron and VERY hot!). Salt, pepper and salsa is ready!!!!
