If you have not owned a Speedy before, then Speedy would be my choice. Sapphire or not would be up to you if you want to see that movement. No wrong answer there.
I have tried on a Zenith EP before. But from what I read, some how their case size seems to be in between sizing. People said 38mm wears like a 38mm (seems a little small), but 42mm like a 44mm (which would be a little too big). And the 42mm wears bigger than the Speedy Pro because of the dial / crystal size.

Consider the Monaco Steve McQueen as well. It was the first auto chrono. The hot one is the blue one. It's left hand wind as a reminder that it is an auto wind watch. At 40mm it wears like 42mm.
