If I had to pick just a single watch for the rest of my life, it would likely be one I didn't currently own. I think a 116600 SD4K would be the best all around forever Rolex for me.

For me it'd be a toss up between by 116610LN Sub and my 116710BLNR GMT. If I really had to choose, then the BLNR would just edge it for the win.

I´d keep my old Submariner. And why not? It´s a real GADA watch, reliable and tough as nails. Lots of lovely Rolexes out there, but my heart is with this one...
