When did Rolex stop putting the silver date wheel
with open 6s and 9s on the 1680 and switch to white with closed 6s and 9s ?

I'm probably wrong but I thought the switch happened at some point around when the sub went from the 16800 to the 16610.

I think your right. Or from the transitional 168000 to the 16610. But regardless, any 1680 with a white date wheel, had been replaced. I believe they all came with silver wheels from the factory.

So I take it they were all silver until the 16800?

Silver date wheels were still about then too, as they were being used still in the 16750 when that first came out in the early 80's. I'm not 100% sure when the changeover happened, probably 82-83 but as it's Rolex nobody knows |

FWIW, I was told the 16660 was always white, even though it had open numerals. The intro year of the 16660 (1978) may or may not suggest a possible change in the date wheel on the Sub.
