Probably neither, I wouldn't bother with both a Sub and a GMT, very similar.

I'd go Sub/GMT (Whatever model you like Best), then maybe a Classic simple Rolex Like an Explorer 1 or 2, and then a Datejust or Daytona.

I'd honestly say...

Day Date II for dress
Double Red Seadweller or Newman Daytona for the weekend watch
GMT for daily
